Laura Smude’s Salsa Canning Recipe

Canning season is one of my favorite times of the year! I don’t grow my own tomatoes anymore, but the Minneapolis Farmers Market is a great place to get all the fresh ingredients for salsa including garlic, onions, cilantro, peppers and of course tomatoes. This year, out of 1 bushel of tomatoes (approximately 53 lbs) we made 26 quarts of salsa – even though I put some in pint jars. 13 quarts of mild and 13 quarts of spicy salsa. Here’s the recipe and a photo of the finished product. …And remember – the recipe is just a guide – make it as spicy or not spicy as you want…sometimes a little less sugar or a little more salt is necessary.  Laura

16 cups tomatoes

5 cups bell peppers

4 cups onions

8  jalapeno peppers (mild) use seeds and peppers!

1/2 cup chopped cilantro

12 cloves crushed garlic

1/4 cup salt

2 1/2 cups vinegar

1/4 cup sugar

1 tsp alum

1/2 tsp cumin

2 – 15 oz cans tomato paste

2- 12 oz cans tomato sauce

Simmer ingredients in stock pot for 60 minutes

Put in pint jars – process in boiling water for 5-7 minutes to complete canning process
